One Serving Please!

I love leftovers for lunch or a quick snack, but when you have several servings of dessert lying around that is just awful.  I can't just say no, and before I know it the entire.... pan of brownies, cake, batch of cookies, etc... are gone! So, here are some great single serving recipes that just hit the spot and hopefully won't ruin your waist line!

Single Chocolate Chip Cookie

1 Tb. Caster Sugar
1 Tb.  Soft Brown Sugar
1 Tb. Butter softened
1 Tb. Water
1 Drop Vanilla Essence
Pinch Salt
Pinch Baking (Bread)  Soda
4 Tb. Flour
1 Tb. Chocolate Chips

Combine ingredients in order given  in a small bowl. (I use a fork.) Place dough on a greased cookie sheet and flatten slightly. Bake in pre-heated oven for 5-10 minutes at 190 (350) just until edges start to brown.

How many of us would sometimes rather just eat the dough rather than bake the cookie? Here is one for you!  Single Serve Cookie Dough (Egg-less)

Mix 1.5 Tb. room temp butter, 3 Tb. flour, 2 Tb. brown sugar, and a drop of vanilla essence with a fork. Add drops of milk (no more than 1Tb.) until you reach desired consistency. Mix in choc chips. Enjoy.

Chocolate Cake in a Mug
(consistency of chocolate sponge pudding)

1/4 cup cake flour or plain flour
1/4 cup caster sugar
2 Tb. cocoa
1 egg
3 Tb. milk
3 Tb. oil (any kind but peanut)
splash in a little vanilla essence

Grease the inside of a mug with butter. Put all ingredients into the mug and stir well.  Bake in microwave on high for 3 minutes. Let stand for 1 minute. Turn cake out into a bowl and serve with chocolate syrup and whipped cream.

Nutella Cake in a Mug
(one large or two small servings)

4 Tb. Self Rising Flour

4 Tb. Caster Sugar
1 egg
3 Tb. Cocoa Powder
3 Tb. Nutella (or other choco-hazelnut spread)
3 Tb. milk
3 Tb. oil

Combine all ingredients in a large coffee mug. Whisk well with a fork until smooth. Microwave on high for 3 minutes. Turn cake out into a bowl and serve with whipped cream and chocolate syrup.
Note: Depending on the wattage of your microwave, you may have to increase or decrease cooking time.
