Blueberries

       Blueberries are in season and Aldi had them for less than half of their regular price last week. Hooray! We love blueberries. I bought four containers and then a couple days later bought two more to stick in the freezer. Jay, not realizing I had two in the freezer already, bought four more a day later. I don't think I would ever tire of them, but needless to say we have eaten alot of them this week. We've had them in muffins and pancakes, over cereal, and on cheese cake and ice cream. I'm sure they will show in waffles very soon as well! Yum!

One of my favourite ways to use froze blueberries is in pancakes.

Blueberry Pancakes

Ingredients:

2 cups self raising flour 2 eggs
1 tsp soda                  2 cups milk
1 tsp salt                    2 Tbs melted butter
2 Tbs sugar                  1 tsp lemon juice
 1 cup of frozen blueberries

Directions:
        Defrost blueberries.
        Put milk and lemon juice in a jug and allow milk to curdle.  Put flour, soda, salt and sugar into a large bowl set aside.  Add eggs, milk and butter to milk mixture and whisk together.  Combine milk mixture and flour mixture and stir until just mixed.  Batter should not be too thick or too thin.   Do not over stir as pancakes will be tough.  Pour 1/4 cup batter for each pancake onto hot griddle. Sprinkle a few berries onto each pancake. Cook until bubbles cover surface.  Turn and brown on other side.  Butter and serve with syrup, jam, honey, or lemon juice and brown sugar.
