Basic Tex-Mex Seasoning

I have a confession to make. I once used left-over meatloaf and cheese as enchilada filling. They tasted great, but that is extreme left-over make-over even for me! This recipe is for a great basic seasoning mix. Jay likes this better than any commercial seasoning I have found.

Basic Tex-Mex Seasoning

Combine:
1 TB cornflour (cornstarch)
1 tsp more or less ground chilli (hot chilli powder)
1 tsp garlic powder
1 tsp salt
1 tsp beef (or chicken) bullion granules
1 tsp cumin
1 tsp paprika
dash of sugar

Meal Ideas

Taco filling: Heat 1 pound (500 grams) of browned ground beef, 3/4 cup cold water, and seasoning mixture until thick.

Fajita filling: Sauté 4 chicken breasts in a bit of oil. Dice chicken, 1 onion, 1 green pepper, and 1 red pepper. Heat until tender crisp. Add a bit of cold water and seasoning mixture. Stir until well coated.

Enchilada sauce: Simmer seasoning mixture minus cornflour and a tin of tomato sauce. Use as you would commercial enchilada sauce.
