We have been on a bit of a muffin kick lately. We have tried several homemade versions. Some have gone over better than others with the boys, but all have turned out beautifully. The blackcurrants were gathered by a friend. I made muffins, jam, and froze the rest! I will apologize in advance for the standard/metric measurement mesh. Enjoy!
Chocolate Chip Muffins
90 g melted butter
2 ½ cups self-flour
½ cup coco powder
¾ cup caster sugar
1 egg
1 ½ cups milk
1 cup more or less of chocolate chips (milk, semi-sweet, or white)
Stir everything until combined. Bake at 180 for 25 minutes.
Blackcurrant Muffins
1 ¾ cups self raising flour
4 tablespoons sugar
1 cup frozen blackcurrant berries (We used fresh)
1 egg
¼ cup oil
¾ cup milk
1. Mix first 3 ingredients.
2. Blend egg with oil using a fork to an emulsion, add milk.
3. Lightly mix dry and wet ingredients until just combined.
4. Spoon into muffin size paper cups in muffin pans.
5. Bake at 180°C for 15 minutes.
(These are a bit tart. The boys didn't like them.)
