Pizza Night!

Pizza is a great way to use leftovers! Whether it is bits of fancy cheeses, slices of lunchmeat, or sauted vegetables hanging out in the fridge, we love it all on pizza. Not long ago I saw a recipe for chicken pizza on-line I just had to try.  So we had a pizza night and in typical fashion I changed the recipe around a bit. It was so good! and I realized  it would also be a great way to use most any type of leftover chicken.The boys couldn't really help much with the chicken pizza, but they love helping make pizzas.

 My version of Garlic Chicken Pizza
Ingredients
  • 2 boneless skinless chicken breasts, cooked and diced or 1 cup leftover chicken
  • 1 Tbsp butter
  • 1 1/2 tsp minced garlic
  • 1/2 tsp ground black pepper
  • 3/4 cup whole milk
  • 2 Tbsp flour
  • 1/4 cup grated parmesan cheese
  • 1/4 cup red onion, chopped
  • 1 cup mozzarella cheese
  • 1/2 tsp oregano
  • 1/2 tsp parsley
  • 1/4 tsp salt
  • 1 large pizza crust
Instructions
  1. Heat oven to 200 (400F) degrees and bake pizza crust for 5 minutes. 
  2. Meanwhile to make sauce, saute garlic in butter on stove top for 1-2 minutes over medium heat.
  3. Add in milk and whisk together, then reduce heat to medium-low.
  4. Slowly pour flour into milk mixture whisking constantly to keep it from getting lumpy.
  5. Add pepper, oregano, parsley and salt and continue to whisk well until it thickens, for just 1-2 minutes.
  6. Turn off heat and add Parmesan cheese.
  7. Stir until cheese is melted.
  8. Top pizza crust with sauce, then add cooked chicken, onions, and cheese spread evenly over top.
  9. Bake at 400 for approximately more 10 minutes until dough is done and cheese is golden.

 One of my favourite pizzas to make lately has been olive oil, garlic, red onion, tomato, asparagus, and mozzarella.
