Leftover Vegetable Soups

When Jay and first got married I made vegetable soup or stew every couple of weeks. I had leftover veg after every single meal.  It seems going from cooking for two ladies that were virtually vegetarians to cooking for one man that likes meat alot is an adjustment! I don't have as many leftovers any more. Thankfully my boys are pretty good about eating their veggies, but soup is always my "I don't feel like cooking today" fallback because it is so effortless and there are so many variations. Using leftovers just makes it that much easier. It is so simple. Just find a plastic tub with a lid that will fit easily into your freezer and mark it SOUP! Whenever there is a spoonful of sweet corn, green beans, or carrots leftover after a meal throw it in the box. When the box is full and you don't feel like cooking dinner, survey the contents. Maybe all you need to do is saute an onion and some garlic and add some beef or chicken stock the contents of your box and season. Viola! Soup! or maybe your box is nearly all sweet corn so you decided to make chowder, or maybe all peas so you decide to add some ham. If your freezer is large enough you could have two or more boxes going at the same time. For example in one all the corn, peas, green beans, mashed potatoes, brussel sprouts, and turnips for stew.  In another add sweet potato, carrot, butternut squash, celery, and parsnip to start a spicy curry soup. Use your imagination and enjoy!
