The Sunday roast is a tradition in Ireland. It can be any joint of meat or a whole chicken, but it must be served with vegetables and lots of potatoes! One thing I always have no matter how many mouths there are to feed, is leftovers. My favourite way to use them in to make soup.
Start off by chopping an onion and some garlic and frying it until soft in a bit of olive oil. Cut everything into bite sized pieces and thrown into the pot...especially any leftover gravy. If needed you can bulk it up with frozen vegetables. Add some stock cubes, seasoning, and complementary herbs and water to cover. Bring to a boil. If desired add a cup or two of small pasta. Simmer until done. Enjoy!
